Grillo

The press, ancient and historical tool, is the symbol of the way of producing wine in the past. It was used to press the marc during the vinification process, following the alcoholic fermentation. A heavy cast iron block that separated the marc from the must, allowing to increment the grape’s productivity. The pressing was carried out by man and even if it initially was a simple process, after hours it would become difficult, requiring the strength of two people.

Grillo, one of the most widespread native white varieties in Sicily, was born in Sicily at the end of the ninth century from a graft of Zibibbo and Catarratto grapes. It is mainly found in the territory of Trapani, where it is the main variety to produce the best DOC wines. It’s a vigorous variety, very resistant to heat and drought, yields fresh, fragrant wines, a true reflection of the Mediterranean landscape. To the palate it is very fresh and balanced. It pairs best with fish dishes.
